In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, and chopped bell pepper. Sauté until onions are translucent.

Add diced tomato, thyme, Scotch bonnet pepper, salt, and black pepper. Cook for 2 minutes.

Add pigeon peas, coconut milk, and water. Bring to a boil, then reduce heat and simmer for 25 minutes.
