Thai Rice, also known as Khao Pad, is a popular street food in Thailand and is often made with leftover rice from the previous day.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Heat vegetable oil in a wok or large skillet over medium heat.

Add garlic and onion, sauté until fragrant.

Add carrots, broccoli, bell pepper, and frozen peas. Stir-fry for 3-4 minutes.

Push the vegetables to one side of the pan and add the cooked rice.

Pour soy sauce and lime juice over the rice and vegetables. Stir-fry for another 2-3 minutes.

Season with salt and garnish with cilantro and spring onions.

Remove from heat and let it rest for 5 minutes before serving.
