  2. In a food processor, blend the tofu, vegan cream cheese, maple syrup, lemon juice, vanilla extract, cornstarch, almond flour, vegan butter, and salt until smooth.
  3. Pour the mixture into a greased 9-inch (23 cm) springform pan and smooth the top.
  4. Bake for 40 minutes or until the edges are set and the center is slightly jiggly.
  5. Turn off the oven and let the cheesecake rest in the oven for 2 hours.
  6. Remove from the oven and let it cool completely.
  7. Refrigerate for at least 4 hours or overnight.
  8. Serve chilled with fresh berries on top.
