  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and steam until tender.
  3. In a food processor, combine the steamed cauliflower, chickpeas, onion, garlic, parsley, cumin, coriander, salt, black pepper, lemon juice, and olive oil.
  4. Process until well combined and the mixture holds together.
  5. Shape the mixture into patties and coat each patty with falafel mix.
  6. Heat some oil in a frying pan and fry the patties until golden brown.
  7. Transfer the patties to a baking sheet and bake for 15 minutes.
  8. While the patties are baking, warm the pita bread in the oven.
  9. Assemble the pitas by spreading tahini sauce on the inside of each pita, then adding a falafel-crusted cauliflower patty, tomato slices, cucumber slices, and lettuce leaves.
  10. Serve warm and enjoy!
