Red bell peppers are a great source of vitamin C, containing more than twice the amount found in oranges.
This is vegan, gluten free and low carb recipe. Dish can be prepared in 30 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 7.

Preheat the oven to 450°F (230°C).

Place the red bell peppers on a baking sheet and roast for 20-25 minutes, until the skins are charred and blistered.

Remove the peppers from the oven and let them cool. Once cooled, remove the skins, seeds, and stems.

In a blender or food processor, combine the roasted peppers, olive oil, garlic cloves, red wine vinegar, honey, salt, and black pepper. Blend until smooth.

Transfer the mixture to a jar or container and refrigerate for at least 1 hour before serving.

Serve as a spread on bread or crackers, or as a relish for grilled meats or vegetables.
