Pierce the sweet potatoes with a fork and bake them for 45-60 minutes, or until tender.

Remove the sweet potatoes from the oven and let them cool slightly.

Peel the sweet potatoes and place them in a large bowl.

Mash the sweet potatoes until smooth.

Add the sage leaves, breadcrumbs, flour, garlic powder, salt, and black pepper to the bowl.

Mix well until all the ingredients are combined.

Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.

Drizzle olive oil over the sweet potato balls.

Bake in the preheated oven for 20-25 minutes, or until golden brown.
