Pierce the sweet potatoes all over with a fork and place on a baking sheet. Roast for 45-50 minutes, or until soft. Allow them to cool.
-
While the sweet potatoes are cooling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and cook until caramelized, about 10 minutes. Set aside.
-
Once the sweet potatoes have cooled, peel off the skin and add the flesh to a large bowl. Mash the sweet potatoes with a fork until smooth.
-
Add the pecans, breadcrumbs, garlic powder, smoked paprika, cumin, salt, and pepper to the bowl with the mashed sweet potatoes. Mix well to combine.
-
Divide the mixture into 4 equal portions and shape each portion into a patty.

Heat the remaining olive oil in a skillet over medium heat. Add the sweet potato patties and cook for 4-5 minutes on each side, until golden brown.
-
Toast the burger buns.
-
Assemble the burgers by placing a patty on the bottom half of each bun. Top with caramelized onions, lettuce, tomato, and ketchup. Place the top half of the bun on each burger.
