Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes all over with a fork and place on a baking sheet. Roast for 45-50 minutes, or until soft. Allow them to cool.
  3. While the sweet potatoes are cooling, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and cook until caramelized, about 10 minutes. Set aside.
  4. Once the sweet potatoes have cooled, peel off the skin and add the flesh to a large bowl. Mash the sweet potatoes with a fork until smooth.
  5. Add the pecans, breadcrumbs, garlic powder, smoked paprika, cumin, salt, and pepper to the bowl with the mashed sweet potatoes. Mix well to combine.
  6. Divide the mixture into 4 equal portions and shape each portion into a patty.
  7. Heat the remaining olive oil in a skillet over medium heat. Add the sweet potato patties and cook for 4-5 minutes on each side, until golden brown.
  8. Toast the burger buns.
  9. Assemble the burgers by placing a patty on the bottom half of each bun. Top with caramelized onions, lettuce, tomato, and ketchup. Place the top half of the bun on each burger.
  10. Serve the sweet potato-pecan burgers with caramelized onions and enjoy!
