Sweet-Potato and Orange Puree with Almond Streusel

Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes.

Toss the sweet potatoes with coconut oil, cinnamon, and salt.

Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.

While the sweet potatoes are roasting, prepare the almond streusel. In a food processor, pulse the almonds until finely chopped.

In a small bowl, combine the chopped almonds with maple syrup.

Once the sweet potatoes are cooked, transfer them to a blender or food processor. Add the freshly squeezed orange juice and blend until smooth.

Divide the sweet potato puree into serving bowls and top with the almond streusel.
