Watercress Soup

Watercress is one of the oldest known leaf vegetables consumed by humans, with records dating back to the ancient Egyptians and Persians.

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add diced potato and vegetable stock. Bring to a boil and simmer until potato is tender.

Add watercress and cook for 2 minutes.

Use an immersion blender to puree the soup until smooth.

Season with salt, black pepper, and lemon juice. Stir in cream.

Simmer for another 5 minutes.

Serve hot with a garnish of watercress leaves.
