Rinse the lentils and set aside.

Peel and chop the apple, onion, carrot, and celery stalks.

In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent.

Add the chopped apple, carrot, and celery stalks to the pot. Cook for 5 minutes, stirring occasionally.

Add the rinsed lentils, vegetable broth, ground cumin, ground coriander, cinnamon powder, salt, and black pepper to the pot. Stir well.

Bring the soup to a boil, then reduce the heat to low and let it simmer for 25 minutes, or until the lentils are tender.

Remove the pot from heat and let the soup rest for 5 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Serve the sweet apple lentil soup hot, garnished with fresh cilantro.
