  1. Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  2. Add curry powder, cumin powder, and turmeric powder. Cook for 1 minute.
  3. Add chopped tomatoes and cook until they soften.
  4. Add spinach and cook until wilted.
  5. Add chickpeas and coconut milk. Stir well.
  6. Simmer for 10 minutes.
  7. Season with salt.
  8. Garnish with fresh cilantro.
  9. Serve hot with rice or naan bread.
  10. Squeeze lime juice over the curry before eating.
