  1. Rinse the split peas and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and diced celery. Cook until vegetables are tender, about 5 minutes.
  3. Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until split peas are soft.
  4. Remove bay leaves and use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
  5. Serve hot and garnish with fresh herbs if desired.
