Cook rice noodles according to package instructions. Drain and set aside.

In a large pan, heat vegetable oil over medium heat. Add garlic and ginger, sauté for 1 minute.

Add red curry paste and cook for another minute.

Add broccoli florets and tofu, stir-fry for 3-4 minutes.

Pour in coconut milk, soy sauce, lime juice, and brown sugar. Stir well.

Add cooked rice noodles to the pan and toss until well coated with the sauce.

Cook for an additional 2-3 minutes until heated through.

Season with salt to taste.
