  1. Boil the potatoes until tender, then peel and mash them. Heat oil in a pan and add cumin seeds. Add chopped onion, ginger, and green chili. Sauté until onions are translucent. Add peas, turmeric powder, garam masala, and salt. Cook for a few minutes. Add mashed potatoes and mix well. Remove from heat and let it cool. Take a spring roll wrapper and place a spoonful of the potato mixture in the center. Fold the wrapper into a triangle and seal the edges. Heat oil in a deep pan and fry the samosas until golden brown. Serve hot with chutney or sauce.
