Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes into bite-sized cubes.

In a large bowl, toss the sweet potatoes with olive oil, smoked paprika, cayenne pepper, salt, and black pepper until well coated.

Spread the sweet potatoes in a single layer on a baking sheet and roast for 20 minutes, or until they are tender and slightly crispy.

While the sweet potatoes are roasting, thinly slice the red onion and dice the red bell pepper.

In a small bowl, whisk together lime juice, honey, and a pinch of salt.

Once the sweet potatoes are done, remove them from the oven and let them cool for 10 minutes.

In a large mixing bowl, combine the roasted sweet potatoes, red onion, red bell pepper, fresh cilantro, and the lime dressing.
