Peel and grate the beets.

In a mixing bowl, combine the grated beets, chipotle peppers, lime juice, olive oil, salt, and pepper.

Let the mixture rest for 30 minutes.

Meanwhile, drain and press the tofu to remove excess moisture.

Cut the tofu into cubes.

In a separate bowl, combine the tofu cubes, lettuce, red onion, and cilantro.
