  1. In a food processor, combine chickpeas, black beans, quinoa, onion, garlic, red bell pepper, carrot, parsley, cumin, paprika, salt, and black pepper. Pulse until well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in breadcrumbs. Let it rest for 5 minutes.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty.
  4. Heat olive oil in a pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  5. Toast the burger buns.
  6. Assemble the burgers by placing a patty on the bottom bun, followed by lettuce, tomato, and pickles. Top with the other half of the bun.
