Remove the tough stems from the collard greens and chop the leaves into bite-sized pieces.

In a large pot, add the smoked ham hock, chopped onion, and minced garlic. Cover with water and bring to a boil.

Reduce the heat to low and simmer for 30 minutes to allow the flavors to meld.

Add the collard greens to the pot and stir to combine. Cook for an additional 30 minutes, or until the greens are tender.

Stir in the vegetable broth, apple cider vinegar, red pepper flakes, salt, and black pepper. Cook for another 10 minutes.

Remove the ham hock from the pot and shred the meat. Discard the bone and return the meat to the pot.

Serve the Southern collard greens hot, with hot sauce on the side if desired.
