Cook the soba noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and ginger, and cook until fragrant.

Add carrots, bell pepper, and snap peas to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly tender.

Add cooked soba noodles to the pan and pour soy sauce and sesame oil over them. Toss everything together until well combined.

Cook for another 2-3 minutes, stirring occasionally.

Sprinkle sesame seeds and green onions on top before serving.

Let the stir-fry rest for 5 minutes before serving to allow the flavors to meld together.
