Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

While the potatoes are cooking, prepare the garlic oil. In a small saucepan, heat the olive oil over low heat. Add the garlic cloves and rosemary sprigs. Cook for 5-7 minutes, until the garlic is golden brown. Remove from heat and set aside.

Drain the cooked potatoes and transfer them to a baking sheet. Use a fork or potato masher to gently smash each potato until it is flattened but still holds together.
