  1. Rinse the rice in cold water until the water runs clear. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add the onion and carrots and cook until slightly softened, about 5 minutes.
  3. Add the garlic, ground cumin, ground coriander, and ground turmeric to the pan. Cook for another 2 minutes.
  4. Add the rice, salt, and black pepper to the pan. Stir to combine with the vegetables and spices.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let the pilaf rest for 5 minutes.
  7. Fluff the pilaf with a fork and sprinkle with chopped fresh parsley before serving.
