  1. In a food processor, blend the cooked beets until smooth.
  2. Add almond flour, cocoa powder, maple syrup, and vanilla extract to the food processor. Blend until well combined.
  3. Transfer the mixture to a bowl and gradually add coconut flour, mixing until the dough is thick and sticky.
  4. Roll the dough into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  5. Place the truffles in the refrigerator to set for at least 1 hour.
  6. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between, until smooth.
  7. Dip each truffle into the melted chocolate, coating it completely. Place it back on the parchment paper.
  8. If desired, sprinkle some sprinkles on top of each truffle.
  9. Return the truffles to the refrigerator for another 15 minutes to allow the chocolate to harden.
  10. Serve and enjoy!
