In a large pot, bring water to a boil. Add corn and cook for 5 minutes. Drain and let cool.

In a mixing bowl, combine red bell pepper, green bell pepper, red onion, apple cider vinegar, sugar, mustard seeds, celery seeds, salt, and black pepper.

Cut the corn kernels off the cob and add them to the bowl. Mix well.

Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
