Singapore Hawker Noodles with Golden Tofu and Coconut

Cook the rice noodles according to package instructions. Drain and set aside.

Cut the tofu into cubes and pat dry with a paper towel.

In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the pan and set aside.

In the same pan, add another tablespoon of vegetable oil. Add the garlic and ginger and cook until fragrant.

Add the curry powder and stir-fry for a minute.

Pour in the coconut milk and soy sauce. Bring to a simmer.

Add the cooked rice noodles, bean sprouts, and spring onions. Toss everything together until well coated.

Cook for another 2-3 minutes until heated through.
