Sesame Vegan Rice

Cook the rice according to the package instructions.

In a large pan, heat 1 tablespoon of sesame oil over medium heat.

Add minced garlic and ginger, and sauté for 1-2 minutes.

Add the mixed vegetables and stir-fry for 5 minutes.

Push the vegetables to one side of the pan and add the remaining tablespoon of sesame oil to the empty side.

Add the cooked rice to the pan and stir-fry for 3-4 minutes.

Drizzle soy sauce over the rice and vegetables, and stir to combine.

Season with salt and pepper to taste.

Remove from heat and garnish with chopped green onions and sesame seeds.

Let the dish rest for 5 minutes before serving.
