Nectarine and Basil Summer Rolls with Almond Sauce
Summer rolls are a popular Vietnamese dish, also known as fresh spring rolls or salad rolls.
This is vegan and gluten free recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Prepare all the ingredients by washing and slicing them.

Fill a large shallow dish with warm water.

Dip one rice paper wrapper into the water for a few seconds until it softens.

Lay the wrapper on a clean surface and place a few basil leaves in the center.

Add sliced nectarines, carrots, cucumber, and red bell pepper on top of the basil leaves.

Roll the wrapper tightly, tucking in the sides as you go.

Repeat the process with the remaining wrappers and ingredients.

In a small bowl, whisk together almond butter, soy sauce, lime juice, honey, and water to make the almond sauce.

Serve the summer rolls with almond sauce on the side, sprinkled with crushed peanuts.
