Preheat the oven to 350°F (175°C).

Wash and peel the sweet potatoes, then cut them into small chunks.

In a large pot, boil the sweet potato chunks until they are soft and tender.

Drain the sweet potatoes and transfer them to a mixing bowl. Mash them until smooth.

Add coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, cornstarch, and salt to the mashed sweet potatoes. Mix well.

Pour the mixture into a greased baking dish.

Bake for 35-40 minutes, or until the pudding is set and the top is golden brown.
