Preheat the oven to 400°F (200°C). Cut the winter squash in half, remove the seeds, and cut into wedges.

In a small bowl, whisk together miso paste, maple syrup, soy sauce, sesame oil, minced garlic, and grated ginger.

Place the squash wedges on a baking sheet and brush the miso glaze over each wedge.

Roast in the preheated oven for 30-35 minutes, or until the squash is tender and caramelized.

While the squash is roasting, thinly slice the scallions.

Remove the roasted squash from the oven and let it rest for 5 minutes.

Garnish with sliced scallions and toasted sesame seeds.
