Peel and cut the sweet potatoes into 1-inch cubes.

In a large bowl, toss the sweet potatoes with olive oil, cinnamon, and salt until evenly coated.

Spread the sweet potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.

Meanwhile, in a small bowl, combine pecans and maple syrup.

Remove the baking sheet from the oven and sprinkle the pecan mixture over the sweet potatoes.
