Calypso Black Bean Soup
Black beans are a staple in Caribbean cuisine and are rich in fiber and protein.

Rinse and drain the black beans.

In a large pot, sauté the onion and garlic until fragrant.

Add the red bell pepper, carrot, and celery. Cook for a few minutes.

Add the black beans, vegetable broth, cumin, and chili powder. Bring to a boil.

Reduce heat and simmer for 20 minutes.

Remove from heat and let it rest for 5 minutes.

Use an immersion blender to partially blend the soup.

Stir in lime juice, salt, and black pepper.

Serve hot, garnished with fresh cilantro and avocado slices.
