Sweet potatoes are not actually potatoes, but rather root vegetables that belong to the morning glory family.

Preheat the oven to 425°F (220°C).

Peel and dice the sweet potatoes into bite-sized pieces.

Cut the pineapple into chunks.

In a large mixing bowl, combine the sweet potatoes, pineapple, olive oil, salt, and black pepper. Toss until well coated.

Spread the mixture onto a baking sheet in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
