  2. Peel and chop the parsnips into small chunks.
  3. Peel and slice the onions.
  4. Place the parsnips and onions on a baking sheet. Drizzle with olive oil, salt, and black pepper. Toss to coat.
  5. Roast in the preheated oven for 30-35 minutes, or until the parsnips are tender and caramelized.
  6. Remove from the oven and let cool slightly.
  7. Transfer the roasted parsnips and onions to a blender or food processor. Add vegetable stock and fresh thyme leaves.
  8. Blend until smooth and creamy.
  9. If desired, adjust the consistency with additional vegetable stock.
  10. Season with salt and pepper to taste.
