Preheat the oven to 425°F (220°C).

Peel and remove the seeds from the butternut squash. Cut it into 1-inch cubes.

In a large bowl, combine the butternut squash, lime juice, olive oil, salt, and black pepper. Toss to coat evenly.

Spread the squash cubes on a baking sheet in a single layer.

Roast in the preheated oven for 30-40 minutes, or until the squash is tender and slightly caramelized.

Remove from the oven and let it rest for 5 minutes.

Garnish with fresh cilantro before serving.
