Smoked Tofu Farfalle Casserole
Tofu is made from soy milk and is a great source of plant-based protein.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 375°F (190°C).

Cook the farfalle pasta according to the package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the smoked tofu and cook for 2-3 minutes.

Stir in the tomato sauce, dried oregano, salt, and black pepper. Cook for another 2-3 minutes.

Add the cooked farfalle pasta and spinach to the skillet. Stir well to combine.

Transfer the mixture to a casserole dish and top with vegan mozzarella cheese.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it rest for 10 minutes.

Garnish with fresh basil before serving.
