Peel and dice the butternut squash into small cubes. Toss with olive oil, salt, and black pepper.

Spread the butternut squash on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

In a large mixing bowl, combine cooked red quinoa, roasted butternut squash, baby spinach, diced red onion, pomegranate seeds, crumbled feta cheese, and pumpkin seeds.
