  1. Rinse the red lentils under cold water.
  2. In a large saucepan, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Add carrot, bell pepper, and tomato. Cook for 5 minutes.
  4. Stir in cumin, paprika, salt, and black pepper.
  5. Add red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
  6. Remove from heat and let it rest for 5 minutes.
  7. Stir in fresh parsley and lemon juice.
  8. Serve hot and enjoy!
