Red lentils are a great source of plant-based protein and are commonly used in Middle Eastern and Mediterranean cuisines.

Rinse the red lentils under cold water.

In a large saucepan, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.

Add carrot, bell pepper, and tomato. Cook for 5 minutes.

Stir in cumin, paprika, salt, and black pepper.

Add red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.

Remove from heat and let it rest for 5 minutes.

Stir in fresh parsley and lemon juice.
