Rinse the beluga lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add diced onion, carrots, celery, and minced garlic. Saute for 5 minutes.

Add tomato paste and stir for 1 minute.

Add beluga lentils, vegetable broth, bay leaves, and fresh thyme.

Bring to a boil, then reduce heat to low and simmer for 30 minutes.

Season with salt and black pepper.

Remove bay leaves and thyme sprigs.

Serve the ragout of beluga lentils hot, garnished with fresh parsley.
