Rinse the red lentils under cold water.

In a large pot, sauté the chopped onion, carrot, potato, and garlic cloves in olive oil until they are softened.

Add the red pepper paste, ground cumin, ground paprika, dried mint, salt, and black pepper to the pot and cook for another minute.

Add the rinsed lentils and diced tomato to the pot, along with 4 cups of water.

Bring the soup to a boil and then reduce the heat to a simmer. Cover the pot and cook for about 20 minutes, or until the lentils are tender.

Use an immersion blender to purée the soup until smooth, or transfer it to a blender and blend in batches.

Serve the soup hot, garnished with fresh parsley and a squeeze of lemon juice.
