  1. Preheat the oven to 350°F (175°C). Peel and grate the beetroot. In a large bowl, mash the ripe bananas. Add the grated beetroot, all-purpose flour, baking powder, cinnamon, salt, coconut oil, maple syrup, and vanilla extract to the bowl. Mix well. Fold in the chopped walnuts. Pour the batter into a greased loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool in the pan for 10 minutes. Transfer to a wire rack to cool completely. Slice and serve.
