  1. Wash and soak the basmati rice for 30 minutes.
  2. In a large pot, heat ghee and fry cashews and raisins until golden. Remove and keep aside.
  3. In the same pot, add sliced onions and cook until golden brown.
  4. Add ginger-garlic paste, green chilies, and tomatoes. Cook until tomatoes are soft.
  5. Add turmeric powder, red chili powder, biryani masala powder, and salt. Mix well.
  6. Add mixed vegetables and cook for 5 minutes.
  7. Drain the soaked rice and add it to the pot. Mix gently.
  8. Add water and bring it to a boil.
  9. Reduce the heat, cover the pot, and let it cook for 15-20 minutes or until the rice is cooked and the water is absorbed.
  10. Remove from heat and let it rest for 10 minutes.
  11. Garnish with fried cashews, raisins, mint leaves, and coriander leaves.
  12. Serve hot.
