Pepitas are pumpkin seeds that have been removed from their white husks and are a popular snack in many cultures.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium saucepan, combine the sugar, butter, honey, black pepper, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.

Remove from heat and stir in the baking soda. The mixture will foam up.

Quickly stir in the pepitas until well coated.

Pour the mixture onto the prepared baking sheet and spread it out evenly.

Bake for 12-15 minutes, or until golden brown.

Remove from the oven and let it cool completely on the baking sheet.

Once cooled, break the brittle into pieces.
