  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the vegetable oil in a deep frying pan.
  3. Fry the plantain slices until golden brown, about 3 minutes per side.
  4. Remove the plantains from the pan and place them on a paper towel to drain excess oil.
  5. Using a tostonera or the bottom of a glass, flatten the plantain slices to about 1/4-inch thickness.
  6. Return the flattened plantains to the pan and fry for an additional 2 minutes per side.
  7. Remove from the pan and sprinkle with salt and garlic powder.
  8. Serve hot with salsa.
