Wash and remove the tough stems from the collard greens. Cut the leaves into thin strips.

Heat olive oil in a large pot over medium heat. Add onion, garlic, and red pepper flakes. Sauté until onion is translucent.

Add collard greens to the pot and sauté for 5 minutes.

Pour in vegetable broth, apple cider vinegar, and maple syrup. Season with salt and black pepper.

Reduce heat to low, cover the pot, and simmer for 30 minutes.

Remove from heat and let it rest for 5 minutes before serving.

Serve hot as a side dish.
