  2. In a large bowl, combine the okara, vegetable oil, lemon juice, lemon zest, and maple syrup. Mix well.
  3. In a separate bowl, whisk together the almond flour, gluten-free flour blend, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Flatten each ball with the back of a spoon.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
