Preheat the oven to 350°F (180°C).

In a large bowl, combine the okara, vegetable oil, lemon juice, lemon zest, and maple syrup. Mix well.

In a separate bowl, whisk together the almond flour, gluten-free flour blend, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until well combined.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Flatten each ball with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
