Slice the Napa cabbage, carrots, bell peppers, red onion, and zucchini into thin strips.

In a large bowl, toss the sliced vegetables with olive oil, Diamond Crystal sea salt, and black pepper.

Spread the vegetables evenly on a baking sheet.
