  1. Soak the dried navy beans overnight in water.
  2. Drain the soaked beans and rinse.
  3. In a large pot, heat some oil and sauté the onion, carrot, celery, and garlic until softened.
  4. Add the soaked beans, vegetable stock, tomato paste, bay leaves, thyme, salt, black pepper, liquid smoke, and hot sauce to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 2-3 hours until the beans are tender.
  6. Remove the bay leaves and thyme sprigs.
  7. Serve hot and enjoy!
