Floating Berries
Floating Islands, also known as ‘Iles Flottantes’ in French, is a classic French dessert that dates back to the 17th century. It consists of a light and fluffy meringue floating on a bed of creamy custard or fruit sauce.

In a saucepan, combine the berries, sugar, water, and vanilla extract. Bring to a boil and simmer for 5 minutes.

In a small bowl, mix the cornstarch with a little water to form a slurry. Slowly pour the slurry into the simmering berry mixture, stirring constantly until thickened.

Remove from heat and let the berry mixture cool.

In a separate bowl, whisk the aquafaba and cream of tartar until stiff peaks form.

Gently fold in the powdered sugar.

To serve, divide the cooled berry mixture into serving bowls. Top each bowl with a dollop of the aquafaba mixture.
