Peel and cut the rutabaga into small cubes.

Toss the rutabaga cubes with olive oil, salt, and black pepper.

Spread the rutabaga cubes on a baking sheet and roast for 25 minutes, or until tender.

While the rutabaga is roasting, thinly slice the onions.

Heat olive oil in a pan over medium heat and add the sliced onions.

Cook the onions, stirring occasionally, until caramelized and golden brown.

In a small bowl, mix together Dijon mustard and maple syrup.

Once the rutabaga is cooked, remove from the oven and let it rest for 5 minutes.

In a large bowl, combine the roasted rutabaga, caramelized onions, and Dijon mustard mixture.
