  2. Add sliced mushrooms and cook until they release their moisture.
  3. Add barley, vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Remove the bay leaf and adjust seasoning if needed.
  5. Serve hot, garnished with fresh parsley.
