Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.

Add sliced mushrooms and cook until they release their moisture.

Add barley, vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Remove the bay leaf and adjust seasoning if needed.

Serve hot, garnished with fresh parsley.
