Moroccan pancakes, also known as Beghrir, are unique due to their spongy texture and the many small holes that form on the surface during cooking. These holes help to absorb the syrup or honey that is traditionally poured over the pancakes, giving them a deliciously sweet flavor.

In a large bowl, mix together the semolina, all-purpose flour, baking powder, and salt.

In a separate small bowl, dissolve the yeast in warm water and let it sit for 5 minutes.

Add the yeast mixture, honey, and vegetable oil to the dry ingredients. Stir until well combined.

Cover the bowl with a clean towel and let the batter rest for 30 minutes.

Heat a non-stick pan over medium heat and melt the butter.

Pour 1/4 cup of the batter onto the pan and cook until bubbles form on the surface.

Flip the pancake and cook for another 1-2 minutes.

Repeat with the remaining batter.
